Garlic-Infused Kale and Tomatoes

A fragrant garlic-sautéed kale and cherry tomato side, ready in less time than it takes to boil a pot of water — pairs perfectly with fish, chicken, or lamb.

Ingredients
  

  • 1 (150g) bunch fresh red kale
  • 3 cloves fresh garlic chopped
  • 12 (100g) cherry tomatoes halved
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • sea salt to taste

Method
 

  1. Wash kale, remove the thick rib from the center of each leaf, and chop into bite-sized pieces.
  2. Chop garlic and slice cherry tomatoes in half.
  3. Add olive oil to a large sauté pan over medium-high heat.
  4. When the oil is hot but not smoking, add fresh garlic, garlic powder, and kale. Sauté for 5 minutes, stirring occasionally — leaves will soften and darken.
  5. Add tomatoes to the pan and continue cooking for another 2 minutes.
  6. Remove from heat and serve hot. Leftovers keep in the fridge up to 5 days.
