This zucchini lasagna is what I make when I want lasagna energy without an hour of layering noodles and waiting on a casserole dish to bubble. It’s stovetop-to-microwave in about 30 minutes total, which is the kind of math that makes a Tuesday dinner actually happen. Zucchini stands in for the pasta sheets, so it’s naturally lower in carbs — and it’s the rare ‘healthy swap’ that doesn’t taste like one. This is the recipe my own family asks for on purpose, not because it’s good for them.
Zucchini is doing real work here, not just filling space: it’s low in calories but holds its shape and texture once cooked down, and brings a good dose of potassium and vitamin C along with it. Swapping it for pasta means all the cheesy, saucy comfort of a lasagna with a lot more water content and fewer refined carbs. The mushrooms add B vitamins and copper along with a meaty bite, so the sausage stretches further than it would solo — and the cream cheese is what makes the filling taste rich without a separate ricotta or béchamel step.

Zucchini and Mushroom Lasagna

Method
- Put 2 cups water into large frying pan to boil.
- Slice zucchini and put into pan, boil gently until blanched but still firm.
- While zucchini cooks, slice mushrooms thin and dice onion.
- Strain zucchini slices, set aside to cool.
- Add ground sausage, onion, and oregano to the pan, cook until sausage is no longer pink.
- When cooked, turn off heat, add block of cream cheese to the middle of the pan and put lid on to melt.
- In an oven-safe glass container, layer pasta sauce, zucchini, meat mixture, pasta sauce, mushrooms, meat mixture, zucchini, and finally top with the remainder of the shredded cheese.
- Shortly before serving, bake for 10-15 minutes at 350°F, or warm in the microwave for 4-5 minutes until bubbly. (Additional time is needed if it is frozen.)
- Seal tightly and store in the freezer for easy weeknight meals or quick grab-and-go lunches.
